Healthy Banana Ice Cream Recipes

banana-splitWe have been on a serious ice cream streak here and following up on our last post about how to make home made ice cream, here is yet another indulgent treat.  Now to be honest, the only health thing about these recipes is the banana, but as long is it is in there we don’t feel so bad about calling them healthy.  They do contain some good things in them like potassium right?  It’s kind of like calling a potato chip a vegetable.  Technically it might be, but it is really not all that good for you.  These recipes are in the same vain, so just keep that in mind.  Now that we got that out of the way lets move on to the more important stuff.

Below are just a couple of recipes that you can use in your home machine.  Nothing quite goes with ice cream like bananas.  Hope you enjoy.

Banana Ice Cream

This frozen treat tastes just like a banana split. So if you’ve got a love for banana splits, this recipe will definitely be a favorite.

Ingredients

  • 3/4 cup low-fat milk
  • 1/2 cup granulated sugar
  • 1/8 – 1/4 tsp ground nutmeg
  • 3 – 4 medium bananas, very ripe
  • 2 cups heavy whipping cream
  • 1 tsp vanilla extract

Instructions

Step One: Using a whisk or a hand mixer on low speed, mix milk, granulated sugar, and nutmeg. Continue mixing until sugar dissolves.

Step Two: Purree (or mash) bananas until they are pureed well. Add mashed bananas to the milk/sugar mixture.

Step Three: Chill the banana mixture for 45- 60 minutes. Chilling the mixture for an hour will produce smoother ice cream in the end.

Step Four: Add the vanilla extract and heavy whip cream and stir gently.

Step Five: Pour mixture into your maker and allow it to churn for about 25 – 30 minutes or according to the manufacturer’s instructions. Last and best of all, get out that spoon and enjoy. You can spice up this delicious recipe in several different ways.

About 5 minutes before your treat is done churning in your maker, you can add some of your favorite banana split toppings to the churning mixture.

Banana & Chocolate Chip Ice Cream

Ingredients:

  • 3/4 Cup Sugar
  • 1/8 tsp Salt
  • 1 3/4 Cups Milk, Almond Milk
  • 2 large eggs, beaten
  • 2 teaspoons Banana extract
  • 6 tablespoons cocoa powder
  • 2 oz bittersweet chocolate

Instructions:

Step One: In a heavy saucepan, combine sugar, salt, and milk and the chocolate. When the chocolate is partially melted, stir in the cocoa powder and cook over medium heat stirring occasionally until the chocolate/ cream mixture is steaming then lower the heat.

Step Two: In a medium size bowl, slightly beat eggs, and add half of the mixture into the bowl with eggs. Slowly whisk the mixture and pour back into the saucepan.

Step Three: Cook over medium heat for about three minutes until slightly thick. Remove from heat and refrigerate until chilled or overnight.

Step Four: When ready to freeze, stir in the 1 1/2 Cups Milk and banana extract into the custard mixture.

Step Five: Start your ice cream maker and pour in the mixture. Freeze until desired consistency then add two or 3 through hole in lid overripe mashed bananas, 1/2 cup dairy free chocolate chips, and even a broken up dairy-free sugar cone to the ice cream maker.

Step Six: Let it mix for an additional 15 minutes. Ice Cream will be soft, so put into the freezer for 4 hours before serving.

These frozen treats can also great served “Sundae Style.” Just get out your favorite sundae toppings and sundae sauces and make yourself the banana ice cream of your dreams.
